Hailing from Mianzwi, his passion and food influences deliver a feast for the senses for all who have the pleasure of staying at Nambiti Hills. We sat down with him to find out what makes him tick and what his favourite flavours are to put on a plate.
Q: How did you get into hospitality?
A: “After studying tourism in secondary school I chose to study tourism at college. When I finished these studies, I was offered a chance to be part of NYCTP (National Youth Chefs Training Programme), run by the SACA Department of Tourism. This took me around to different lodges to complete my training. After my training was complete, I was offered a job at the last lodge I did my practicals at. In 2018 I got a chance to work in the USA for a year. I spent 6 months in Florida and another 6 in Colorado. After coming back home, I joined Madikwe Game reserve for two years until I found myself at Nambiti Hills as a Sous Chef. Almost two months later, I was promoted to Head Chef.”
Q: Why food?
A: “I always say that food came to me. More than loving to eat, I love to create for those around me. I’ve been cooking since secondary school, it’s when food and I first fell in love.”
Q: What drives you?
A: “Growth. I feel a constant need to be better than yesterday and last week.”
Q: What’s your favourite dish at Nambiti Hills right now?
A: “It has to be the duck duo. A combination of confit duck leg and pan seared breast, served with seasonal vegetables, potato fondant, and finished with Madeira jus.”
Q: How would you describe your style of cooking and the food at Nambiti Hills?
A: “I’d say mostly South African cuisine, with a lot of French techniques. This is evident in the menu we are serving right now. It has everything you could expect from a South African game lodge: oxtail, lamb and curries), along with a few surprises like freshly-made pastas.”
